Nana Joes Granola Perfect For My Fab 50s Lifestyle Change!

Manic:  Me thinking about turning 50 next month! 

Managed:  With this milestone birthday on the horizon, I have decided to try to mostly eat plant based foods.  I am not going 100% vegan, but I am striving for 85% to be realistic with my lifestyle.  Plus, eating this way helps our bodies, earth’s animals and the environment as stated in this interesting Medical News Today article.  My thriving and healthy 72-years-young mother also eats mostly vegan and this lifestyle has served her well.

I am certainly not criticizing meat eaters as I do occasionally enjoy a meat meal as well…which is why I am striving for a 85% change. Plus I will still have dairy from time to time as a decadent chocolate malt or coffee ice cream cone are a must have at least once during the hot summer!  Call me fickle, but partially vegan is my goal for now.

I started the gradual dietary switch one week ago and I already feel a positive difference!  I was having bad allergies, left leg and ankle pain and sinus issues.  Not to mention bloating and a sluggish feeling after eating some foods.  I do believe in everything in moderation and after reading countless accounts of folks who went vegan, and marveling at their improved health, vitality and energy, I have decided, at almost 50, to give this mostly vegan lifestyle a try.  I am loving it so far and just in time for me, I discovered the awesome vegan, gluten free and super tasty Nana Joes Granola line!  Who says you can’t have treats on a healthy eating plan?  With Nana Joes delish granola, a little good sweetness can be added to breakfast, snacks and more.  Love this stuff! Check out my tasty breakfast vegan makeover today that I made in 10 seconds…so yummy!I replaced cow’s milk with almond milk (I truly taste no difference) and those sugary processed cereals with the Nana Joes Trifecta Blend Granola, which only has 5 grams of sugar (per half the packaged serving, so I used the one bag for two separate meals). This combo filled me up and I felt energetic and satisfied.  I am pretty impressed with the wholesome and real food ingredients.  Plus, I adore that this stuff is handmade in San Francisco (my hubs and I honeymooned in the City by the Bay 🙂 )

They also have granola bars, too. I am a fan!  My personal favorite is the Swell Bar with Coconut, Almond and Cocoa Nib.

Found! Healthier Organic Popcorn That Is Safe To Microwave!

Manic:  My family years ago when I banned microwave popcorn from our home! Too many reports were surfacing that the chemicals and packaging used to pop the kernels in the microwave could be a health risk.  So we gave it up and we have missed our popcorn.

Managed: Today when I spotted a new brand of microwave popcorn at my favorite local organic and super healthy market (Pomegranate Cafe’s market).  popcorn-saferreinvented-popcornThe packaging says that no chemical coatings or plastics are used in this brand, that is called Quinn Popcorn! I was intrigued so I bought a box to test at home. I followed the instructions to simply pop it in the microwave…literally.  My kids really have missed this snack, so I was hopeful that this new and safer brand tasted just as good as the stuff that I had banned.  It popped beautifully.  poppedI used my microwave setting that has a button that says “popcorn” on it. I think most microwaves have that option now.  It tasted great!  Although I did add a little melted butter for flavor.  Using a little real butter isn’t too bad, as long as only a little is used.  Lots of things could be added to give this extra taste like salt and pepper or Parmesan cheese.  I am so thrilled that it tastes good and is a new option that doesn’t scare me with the packaging/microwaving risks.  I love this!   Quinn offers other flavors that include Parmesan & Rosemary (I so want to try that one), Vermont Maple Kettle Corn, Micro White Cheddar and several others. 

I also like that the only ingredients in this popcorn is just popcorn and sea salt.  No chemicals!  I say hooray for that and let’s get popping!  Here’s hoping that more companies like Quinn pop up giving fresh farm to bag organic snack options!  See additional places to purchase this smart popcorn snack here at the Quinn website.

Fab Fall Food: Simple & Low Calorie Pumpkin Spice Mini Muffins

Yummy pumpkin season has arrived and I have found a healthier recipe for delicious pumpkin spice mini muffins! With the help of my favorite meal planning site, MealGarden, I found a delish recipe for Pumpkin Spice Muffins!  And MealGarden’s recipe muffins are only 79 calories each (without optional chocolate chips) and only 4.8 grams of sugar each, too.  Not bad! Take a look at this video preview of this super simple seasonally pleasing treat that tastes like a moist pumpkin bread.  I modified the recipe just a bit due to my daughter’s tree nut allergy….

Here is how you make these incredibly tasty pumpkin spice muffins that, my daughter and I think, taste like the pumpkin bread sold at Starbucks.  Make this healthier, lower calorie and lower sugar recipe yourself!

Note: this is NOT gluten free.  I believe that Spelt flour is a better alternative to white flour because it is an ancient relative of wheat that contains B vitamins, fiber and trace minerals.  And I think it tastes so similar that is has become my family’s preferred option to white processed flour.  But Spelt flour is not gluten free.  For a gluten free flour, use almond flour.

Ok now back to the recipe!

I took MealGarden’s awesome recipe and tweeked it just a bit only because my daughter is allergic to tree nuts so we couldn’t use the almond meal/flour their awesome recipe calls for.  I also added dark chocolate chips (my addiction, dark chocolate) but the muffins without the chocolate were truly just as good.  To get MealGarden’s original recipe (that I would make if I didn’t have the tree nut allergy) go here to MealGarden.  I totally recommend their version and all of their recipes because their meal and snack ideas check out with whole food and healthy ingredients.  I love MealGarden!

To try my slightly different version, here is the recipe….

What You Need:

1 cup Spelt Flour

1/2 cup organic sugar

1 tsp pumpkin pie spice

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

1/2 cup extra virgin olive oil

1 tsp vanilla extract, pure…I used Organics Madagascar Bourbon Pure Vanilla Extract…yum!

1 cup pumpkin, canned….I used Sprouts Organic brand

Organic dark chocolate chips….optional

What You Do:

  1.  Preheat oven to 350 degrees.
  2. In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda, baking powder and salt.
  3. Fold in oil, vanilla and pumpkin to form a smooth batter.  Add optional chocolate chips if desired.
  4. Spoon one tablespoon of batter into 24 paper-cup-lined mini-muffin cups.
  5. Bake for 15 minutes or until toothpick inserted into center comes out clean.  Seal in air-tight container or freeze.  To defrost, set on counter for 15 minutes, then enjoy!pumpkin-muffin-1

Manic:  You have been invited to or are hosting a 4th of July celebration and you need something fun and festive to bring…but also something that is easy and simple to prepare.

Simple Sangria That Your Guests Will Swear You Made From Scratch!

Sam’s Club sells a yummy premade sangria that is so good that all of my guests swore that I made from scratch.  It doesn’t get any easier than this.  Here are the four steps for colorful red sangria that is perfect for the 4th and so easy to make, too…

  1. Purchase Lolailo Imported from Spain Sangria in the 1.5 liter glass jar (under $8) at Sam’s Clubs stores.
  2. Fill pitcher with lots of ice.
  3. Add full bottle of Lolailo Sangria.
  4. Add packet of frozen fruit that is also sold at Sam’s Club. Make sure it is frozen as that works well and looks nice and festive in the sangria pitcher. The fruit floats to the top and looks and tastes great!

Easy Breezy Flag Brownies

Simply prepare brownies and cut into rectangle shapes.  Then spread brown frosting on top so that it matches the brownie color and then top with red, white and blue M&Ms to make little American flags.

Star Spangled Cheesecake

Make or buy a prepared cheesecake and top it with blueberries all around.  Then take strawberry slices to make a star right in the center.

Sweet & Salty 4th of July Popcorn Mix

Add red, white and blue peanut M&Ms to a bowl of popcorn and you’ve got a sweet, salty and festive mix of yummy fun.  Party City sells red, white and blue candy that is similar to M&Ms and Target sells the red, white and blue seasonal M&Ms.

Star Spangled Soda/Beverage of Choice

Freeze pieces of cut up strawberries with blueberries and raspberries in an ice tray.  Then once frozen simply place in clear glass and add ginger ale or Sprite to get a bubbly red white and blue festive beverage.

Oh So Easy Red, White & Blue Treats Display

Grab three clear glass or plastic containers and place white yogurt covered pretzels in one jar, red licorice sticks in another and blue M&Ms in the third and place side by side.  Make a fun little 4th of July treats sign to place by the display.

For these take square shaped pretzels, cover with white icing and then place red, white and blue M&Ms around the pretzel to form a flower.

Quick & Easy Foods To Bring To A Holiday Dinner

Manic:  You have been invited to a friend’s Thanksgiving dinner but you don’t have a lot of time to prepare something elaborate.  Or perhaps you have a long road trip planned to get to your family’s Christmas celebration.  In both cases, you want to bring something festive and fun, but you don’t have a lot of time to make something elaborate.

Managed:  Found some easy ideas, some prepared and some store bought to take to that holiday gathering that folks will love and appreciate…and you don’t have to work hard.  Check out these ideas…

Salad in Seconds

*Easy 5 Second Salad – I call this the easy 5 Second Salad because you can grab the ingredients at the store and toss right before you bring the salad to the dinner.  Simply buy your favorite salad greens mix and buy a 1/2 pound (or 1 pound for large salad) of the deli Greek salad mix that includes the cucumbers, tomatoes, olives, etc. and add to the salad greens.  Then toss and top with a little olive oil and white balsamic vinaigrette to enhance the Greek salad dressing.  salad fastAdd a dash of salt and pepper and you’ve got a tossed salad that you made in seconds.

Fun & Festive Appetizer

*Cheese & Meat Turkey Tray – Found this super simple and visual idea on Pinterest.  Simply use cheese, crackers and meat to create a turkey.  turkey meat cheese platterStart with the outside layer of feathers made with crackers.  I recommend the Flipsides pretzel crackers.  Make two layers of these.  Then make the next inside layer next to the crackers using squares of yellow cheese of your desired cheese flavor.  Next the inside layer is made with salami, then a layer of Colby jack cheese squares and another layer of the salami.  Make the center inside piece look like the turkey using a piece of Colby jack cheese cut into the shape of the front of a turkey body.  Put a round piece of yellow cheese on top to make the head with two peppercorns for the eyes.  Use an empty pistachio nut shell to make the beak.  Use a folded piece of salami for the part of the beak that hangs down.  Use two toothpicks for the legs.

*Pilgrim Hats – Another simple treat to make are pilgrim hat cookies.  pilgram hatsSimply take a fudge striped cookie (Keebler makes these) and turn it face down.  Then dip a miniature chocolate peanut butter cup into white (or yellow) frosting and place it over the center of the cookie so that it covers the hole.  This makes the hatband and crown.  Last place an orange Tic Tac on the crown to make the buckle.  Super easy and tasty Turkey Day treat.

Our Homemade Teen Approved Healthy Yogurt Parfait Recipe

Manic:  Balancing breakfast with busy school day mornings and making sure that my teenagers eat at all, much less gobble down a healthy meal that is quick to prepare as well.  Not always an easy feat!

Managed:  Worked with my teen daughter to put together a homemade yogurt parfait that is healthy and that she will eat and can eat….since she is allergic to tree nuts.  We start with a plain yogurt, believe it or not and sweeten it ourselves.  Our experimenting worked and the result is tasty, nutritious, lower in sugar than many other quick breakfast items and easy to make.  Take a look….

Harris House Homemade Healthy Yogurt Parfait

What You Need:

3/4 cup any good quality organic Greek plain yogurt brand

1 Tablespoon KIND Healthy Grains Raspberry Clusters with Chia Seeds

1 Stevia packet

dash of cinnamon to taste

1 capfull of Vanilla Extract

As many blueberries as you like

What You Do:

1.  In a small mixing bowl, combine the stevia packet and cinnamon with the yogurt and stir well.

2.  Place yogurt in serving dish and top with KIND cluters, blueberries and a dash of cinnamon.  You can also layer this recipe to make several layers if desired. with spoon

Yum!  That’s it!  It is so easy and delicious.  Try it!
